Now the weather has warmed up a bit here I'm back onto yoghurt for breakfast (I can't bear it when it's cold outside!) and I was thinking about sharing my yoghurt recipe. I use an electric yoghurt maker - thank you for the instructions on how to do it without - I've heard of people wrapping it in blankets and putting it in the airing cupboard, or in a thermos. I would suggest though, based on Elizabeth David's instructions, to bring the milk to a boil really slowly, on the lowest possible light, so the water has maximum chance to evaporate away. I also keep mine warm for 10 hours and then leave it at room temperature for another 6-8 hours, after which I stir it well and then put it in the fridge. It's a day-long process - but SO worth it! Only trouble is...it doesn't stay in the fridge all that long, and then I have to do it all again...;-)Anonymousnoreply@blogger.com
